Ingredients:
2 Ghost Peppers (Bhut Jolokia) – handle with gloves!
1 ripe mango, peeled and diced
1/2 cup white vinegar
1/4 cup lime juice
1 small onion, chopped
2 cloves garlic, minced
1 tbsp honey (optional, for balance)
1/2 tsp salt
1 tbsp olive oil

Instructions:
Prepare the ingredients: Wear gloves while handling Ghost Peppers. Remove stems and chop them. Dice the mango, onion, and garlic.

Sauté the aromatics: In a pan over medium heat, add olive oil and sauté onion and garlic until soft and fragrant (about 3 minutes).

Cook the peppers: Add the Ghost Peppers and stir for about 1 minute. Be careful—Ghost Peppers release intense heat!

Blend the mixture: Transfer the sautéed ingredients to a blender. Add mango, vinegar, lime juice, honey, and salt. Blend until smooth.

Simmer the sauce: Pour the blended mixture back into the pan and simmer for 5-7 minutes to enhance the flavors.

Store & enjoy: Let the sauce cool, then transfer it to a bottle or jar. Refrigerate for up to 2 months.
